How I Use Fresh Summer Tomatoes

I definitely was not born with a green thumb. In fact, it's a family joke that I usually can't keep much alive - other than my kids!  Down the road, I'd love to spend some time seeing if I can develop more of a green thumb, but it's looking like it will be awhile before I slow down enough to add that to my plate. In the meantime, I am thankful for our local farmer's markets and love supporting those who do have a green thumb!  

Today, I am sharing four of my favorite ways to use up my summer tomato stash. The options are endless, really, so I am hoping that you will share with me your favorite recipes too! 


Simple Summer Tomatoes 

My Southern roots are probably being exposed right now, but I love nothing more than a thick slice of tomato sprinkled gently with salt and fresh cracked black pepper. Obviously, slices of tomato are great on a number of dishes; however, in my house, all you need is the simple summer tomato all by itself! Nothing beats it!  


Crushed Tomatoes

I love to saute or roast cherry tomatoes and then add a few fresh herbs or seasonings. An easy way to do this is to place them in a sauté pan over medium heat; then cook just until the tomato skins wilt and are easy to crush. Season lightly with salt, pepper and fresh cut basil, and you've got yourself the perfect tomato concoction to put on top of grilled chicken, fish, fresh salad or to eat by itself with a fork! 


Tomato, Mozzarella and Basil Stacks

I love to top a thick slice of tomato with fresh mozzarella and basil. It is like a Margherita Pizza without all the effort! These three ingredients are a match made in heaven, and I find myself adding these tomato stacks to my lunch, snack and dinner menus! If you're feeling extra fancy, drizzle lightly with a balsamic glaze.


Bruschetta

This classic appetizer is a no brainer when you have a bowl full of fresh tomatoes. Dice up some tomatoes and season with salt, pepper and fresh basil. Toast baguette slices and top with seasoned diced tomatoes. You'll love this appetizer for entertaining your friends or for family dinner. It is simple and flavorful and the perfect taste of summer.


These are just a few of the ways I use my summer tomatoes. Another one of my favorite recipes for tomatoes in summer time is Cucumber Tomato Salad. I definitely have never successful harvested cucumbers; however, I do know that Cucumber Tomato Salad is a summer staple! I hope you enjoy these ideas!
