Flourless Chocolate Chip-Peanut Butter Cookies
One perk to quarantine is that I’ve had more time to get in the kitchen to play around and work on creating new recipes! And while I’m usually hesitant to mess with a classic, I was out of butter so had to look for an alternative fat to use. Peanut butter was my solution, and the finished product ended up being a hit!
Flourless Chocolate Chip Peanut Butter Cookies are quick and use staple ingredients you probably already have on hand! They’re a perfect chocolate fix for your sweet tooth and a little healthier than the classic Tollhouse cookie.

Flourless Chocolate Chip-Peanut Butter Cookies
MAKES 24 Cookies

INGREDIENTS
1/2 cup peanut butter
¾ cup brown sugar
2 large eggs
1 Tbsp vanilla extract
1 cup old-fashioned oats
1 tsp baking soda
1/2 tsp kosher salt
2/3 cup semi-sweet chocolate chips
METHOD
Preheat oven to 350 degrees.
Combine peanut butter, brown sugar, eggs, and vanilla in a large bowl with a hand mixer until blended and smooth.
In a smaller bowl, combine oats, baking soda, and salt. Stir to combine. Add oats to almond butter mixture, stirring to combine. Gently fold in chocolate chips.
Scoop dough by 1 ½ Tbsp, and evenly place across two cookie sheets. Bake 9 minutes or until set in middle. Let cool on baking sheet 10 minutes. Transfer peanut butter-chocolate chip cookies to baking rack to cool completely.
