Simple Lime Vinaigrette

I’m a recovering multi-tasker – actually can’t say I’m “recovering” yet, but I’m making an effort to focus on one thing at a time! And what better way to focus than on a MULTI-PURPOSE recipe like this SIMPLE LIME VINIAGRETTE to get that uber-productive, multi-tasking-like fix?! 

Incorporating citrus like lemons and limes is one way I find myself transitioning my taste buds from heavier winter comfort foods to lighter spring dishes – especially when I can add it to fresh ingredients and salads. Lemon vinaigrettes are fairly common, but lime ones not so much. So I decided to change things up a bit, and I am loving the results! 

Simple Lime Vinaigrette is my new favorite spring dressing. It’s fresh and light, and here are all the ways I like to use it:

  • Toss it over salad greens 

  • Use it as a base for a black bean salad

  • Drizzle over roasted vegetables or fresh tomato slices

  • Use it as a marinade for chicken or fish

This dressing is so versatile, you’ll love using it all spring AND summer. If you’re looking to make a salad for 4 to 8 people, simply cut the recipe in half. Simple Lime Vinaigrette

Makes ¾ cup or 12 Tablespoons

Simple Lime Vinaigrette perfect summer dressing for greens, a roasted vegetable or black bean salad, or a marinade for chicken or fish. Halve the recipe if you want to make just enough to toss a salad for 4 to 8 people. 

INGREDIENTS

  • ¼ cup fresh lime juice

  • 2 teaspoons honey

  • 1 teaspoon Dijon mustard

  • ½ teaspoon kosher salt

  • ½ teaspoon ground cumin 

  • ½ cup extra-virgin olive oil

METHOD

  1. Combine first five ingredients in a jar or small storage container. Add lid, secure, and shake well.  Slowly add oil, replace lid and secure, and shake well. Store in refrigerator until ready to serve. Shake well before using.
