Quick Pork & Vegetable Stir-Fry
How about a stir-fry that requires almost no chopping? QUICK PORK STIR-FRY uses a bag of fresh broccoli slaw and an easy hoisin-lime-sesame oil sauce to keep total time to just 10 minutes but create a flavorful dish.
Hoisin and sesame oil are two ingredients that you may not have on hand. They’re staple ingredients that impart quick flavor in many Asian dishes, so I’ve found both are worth keeping around in the kitchen. Store the hoisin sauce in the refrigerator once opened, and oil in a cool, dark cabinet or pantry. Punch up the flavor a little more by serving with soy sauce.

Quick Pork & Vegetable Stir-Fry
MAKES 3-4 SERVINGS | Yields 4 Cups
TOTAL TIME: 10 MINUTES
This Quick Pork & Vegetable Stir-Fry is great served as-is, over hot cooked rice or riced cauliflower. The options are endless, making it a perfect dish for differing palates at the dinner table!
INGREDIENTS
3 tablespoons hoisin
1 tablespoon lime juice
2 tablespoons sesame oil, divided
1 red bell pepper, sliced into thin strips
¾ pound pork tenderloin, cubed into 1-in. squares
¼ teaspoon salt
¼ teaspoon freshly cracked black pepper
1 (12 oz.) bag fresh broccoli slaw
2 scallions, chopped
METHOD
Whisk together hoisin, lime juice, and 1 tablespoon sesame oil in a small bowl. Set aside.
Season pork with salt and pepper. Heat remaining 1 tablespoon sesame oil in a large skillet over medium-high heat. Add pork to hot oil, and saute 3 to 4 minutes until all sides are browned.
Reduce heat to medium. Add bell pepper to skillet. Cook 2 to 3 minutes, stirring occasionally, until pepper is beginning to get tender and pork is almost done.
Add broccoli slaw. Pour hoisin mixture over pork mixture in skillet. Cook 2 minutes or until pork is done and vegetables are warm and tender-crisp.
Serve stir-fry alone, over steamed riced cauliflower or over hot cooked brown or white rice. Sprinkle each serving with scallions.
