Dairy-Free Cold Brew Kahlua Popsicles

O.M.G!!! Thanks to these creamy treats the Alabama heat and humidity seems much more manageable! The overall alcohol content is very minimal and then about half of that cooks off - which means there ends up being only about ½ tsp of alcohol in each popsicle.  With so little alcohol, I felt okay letting my kids try, but neither was crazy about the coffee flavor. That’s fine with me though since that means more popsicle for my friends and me! Not a Kahlua fan?  No problem! Substitute another coffee liqueur or use a flavored coffee syrup. 

I also tried some new popsicle molds this time around, and they were super-easy to make. I've found that there's a big difference in popsicle molds and how well they work, and this is one of the best that I've tried (Find my popsicle mold here: Onyx Stainless Steel Popsicle Mold. ). It is pricier than the bright-colored plastic ones, but should last for years - not just 1/2 a summer like some of my previous plastic molds!

Dairy-Free Cold Brew Kahlua Popsicles

Not a Kahlua fan?  Substitute another coffee liqueur or use a flavored coffee syrup. 

INGREDIENTS

  • ½ cup cold brew coffee concentrate (strong coffee or espresso will work too)

  • 2 tablespoons cornstarch

  • 2½ cups full fat coconut milk (about 1½ 13.5-oz cans)

  • 2 tablespoons Kahlua

  • ½ cup honey

  • ¼ teaspoon sea salt

  • 1 teaspoon vanilla extract

  • OPTIONAL CHOCOLATE DRIZZLE : ¼ cup chocolate chips, 1 teaspoon coconut oil

METHOD

  1. In a small bowl, combine cornstarch and cold brew concentrate. Whisk until smooth.

  2. In a medium saucepan, add the cornstarch cold brew mixture, coconut milk, Kahlua, honey and salt.

  3. Heat the mixture on medium heat to thicken, whisking frequently. Cook until the mixture coats the back of a spoon - about 6 minutes.

  4. Remove from heat and add vanilla extract.

  5. Place mixture in refrigerator until cool - about 4 hours.

  6. Pour into popsicle molds and place in freezer overnight or until solid.

  7. OPTIONAL : Melt chocolate and coconut oil together in 20 second spurts in the microwave. Drizzle popsicles with melted chocolate mixture.
