Lemony Arugula Salad with Parmesan
A new salad perfect for summer + a kitchen hack = WIN-WIN big time!
Has anyone else gotten a little too dependent on bagged salads this winter? It’s easy to get in a rut, and I’m calling myself out on this one. I’ve been ready/needing to upgrade my salad repertoire, and this LEMONY ARUGULA SALAD with PARMESAN is the perfect fit. Not only does it have a light lemon dressing and baby spring peas, but it also is about as easy as tossing together those bagged salad components.
KITCHEN HACK
My secret is a simple bottled dressing hack. Find a good-quality bottled vinaigrette dressing and add a little lemon juice to it before tossing with the salad. It’s a simple dressing upgrade that meshes perfectly with the Parmesan and greens and has been on my menu ever since I first threw it together. It’s a recipe I finally decided it was too good not to share!

Lemony Arugula Salad with Parmesan
Makes 6 to 8 Servings
Parmesan and fresh peas are the perfect complement to the sharp lemon dressing. To dress it up a little more, toss in 1 cup of trimmed, slightly blanched fresh asparagus pieces.
INGREDIENTS
1 (5-oz) container baby arugula (or about 5 cups)
1 cup fresh peas or frozen peas, thawed
¼ cup olive-oil vinaigrette dressing
1 to 2 teaspoons fresh lemon juice
2 to 3 ounces freshly shaved Parmesan
METHOD
Combine arugula and peas in a large bowl. Whisk together dressing and lemon juice. Pour over arugula and add cheese; toss to coat greens.
